Breakfast Bacon Bake

Serves: 12

INGREDIENTS:

12 slices of bacon
½ cup chopped, sweet red pepper
½ cup chopped onion
2 lbs pork sausage / mince
12 large eggs
¾ cup coconut cream
3 T nutritional yeast
1 t salt ½ t freshly ground black pepper

In an oiled pan, cook the bacon to crisp, cool, then cut into small slices, and set aside.

Using the same pan with the bacon grease, sizzle the chopped red peppers and onions for about 3 minutes.

Add the sausage / mince to the pan with the veggies, and brown until the sausage / mince crumbles.

In a large bowl, whisk together the eggs, coconut cream, nutritional yeast, salt, and pepper.

Place the sausage mixture into the slow cooker, then top with the bacon slices, followed by the egg mixture.

Cook on HIGH for at least 2 hours, or until the middle reaches 160ºF.

Serve, and enjoy.
