Blueberry Compote Coconut Yogurt

INGREDIENTS:
1 cup fresh blueberries, divided
¼ cup filtered water
1 t grass-fed gelatin
⅛ t monk fruit powder
½ cup plain coconut yogurt
Blueberry Compote:
Place half of the blueberries and water in a medium saucepan, and heat over medium for 3 minutes or until bubbling.
Use a fork to mash the blueberries. Add the remaining blueberries, and continue to heat for 7 minutes. Stir in the monk fruit powder, and gradually stir in the gelatin. Cool for 10 minutes.
Transfer to a small jar, and continue to cool for 2–3 hours to thicken.
Blueberry Compote Coconut Yogurt:
Mix 1 (serving size) compote into ½ cup plain coconut yogurt, or use as a topping for the plain coconut yogurt.
